Nick Apostle grew up in the restaurant business, working in his father’s restaurant during his high school and college years. After graduating with a business degree from the University of Mississippi, Apostle went to work full-time at his father’s place, Paul’s Restaurant. He remained there until 1983 when he opened his present Nick’s in Jackson. He has been busily building restaurants ever since.
In 1986 Apostle helped cofound the Crescent City Seafood Grill, Mahogany Bar, and the Purple Parrot Cafe in Hattiesburg, Mississippi, and in 1989 he assisted in the establishment of Capitol Seafood in Jackson. In 1992 Apostle cooperated in the construction of Rodeo’s and Stockyard Steaks, two restaurants in which he now shares ownership.
Despite running a myriad of restaurants, Apostle finds time to work in community activities. For the last four years he has cochaired the menu selection and served as a judge for the March of Dimes Gala. He was responsible for coordinating the food service for the southern Governor’s Conference in 1989 and has been involved in coordinating the last two Governor’s Inaugural Balls.
A leader in the restaurant community as well, Nick is past president and current chair of the board of the Mississippi Restaurant Association as well as president of the Jackson chapter of the association. He is one of the founders and presently serves as chair of the board of trustees for the Mississippi Service Industry Self Funded Workmen’s Compensation Fund, and he is president of the board of directors for Metro Jackson’s Convention and Visitors Bureau. He is a past guest chef at the Salute to Southern Chefs, which benefits Save Our Strength.
