Eggs Benedict with Melon from Dr. Bob Porter

Waking up in the woods is not all that it’s cracked up to be. The guides have already started breakfast. And at least one has to work his morning routine into the breakfast preparation. And this morning, breakfast is nothing to sneeze at in or out of the woods. It includes melon, and of all things, eggs benedict. Complete with slices of pre-cooked ham, that have been warmed over a propane burner, in a dutch oven. English muffins done on a griddle. And of course, poached eggs, cooked in a muffin pan, which has been sprayed with vegetable oil. The hollandaise sauce is a good quality commercial dry mix, that’s mixed with melted butter and cold milk. The method of poaching eggs in the field is pretty ingenious. The muffin pans are stacked in the dutch oven and steamed. The oven is covered, and as we will see the eggs tend to cook from the bottom up, and are rotated at regular intervals. This is pretty fancy fare, particularly when you see that young college kids are pulling it off. They obviously learn more than just sleeping equipment, and traversing white water.
